Good job working on this!

The car seemed to be sliding sideways while I was turning.

I would recommend this tutorial for the feeling of a vehicle with wheels (sorry it's godot but same thing is probably possible in unity): https://kidscancode.org/godot_recipes/4.x/2d/car_steering/index.html

Some of the track ideas are really neat. Although I think consolidating some of your ideas into a smaller selection of levels and then focusing on polish and quality of life features would have served the game a bit better. There's definitely potential here if you want to keep working on it, but 6 levels was probably a bit ambitious for a 7 day game jam.
