Personally, this is the ideal solo project concept. I'm excited to see how this ends up panning out by the end of the Jam!

I really like the concept of your game, and I think since you are working on this by yourself, you've chosen a good scope where you won't become overwhelmed with all the work. I like how weather events will be able to affect how the plants grow, and I'm curious if players will be able to visually see the plants grow through different stages.

Your core concept, scope, and mechanics are very well suited to a solo project. The mechanics are relatively simple, but adding small, unexpecting tweaks can be more than enough to make your game stand out without revolutionizing the genre.  Now that we're getting into the ladder half of the jam, I think you may benefit from having a more fleshed out production plan so you can more easily split up your work into different deadlines and prioritize different aspects of the game as you iterate.

The core concept matches the climate theme exceptionally well. Playing as the owner of an indoor planting yard while dealing with environmental toxins and climate disasters perfectly captures the real-world issue of food peril. Using infographic animations to spread awareness makes the game's message both relevant and impactful. The gameplay loop sounds like it will be very interesting. Managing the garden by watering plants during the day and surviving unpredictable weather events at night creates a solid rhythm. Balancing the collection of fully grown food against the constant threat of consuming all your food storage adds a great layer of engaging survival strategy. While the foundation is strong, the game's innovation needs to be improved. The current mechanics, such as utilizing various plants and managing fertilizers with specific active days, are quite standard for the farming simulation genre. Introducing more experimental or unique mechanics would help the project stand out and feel completely new.
