You can still buy Iron at Ebron, it's just not always on the table.
Unless I forget a store in Dorgania, Ebron is the only store for Iron.
The new shop system is just the first draft of the idea. I'll change it a bit in the next update. One of the new ideas is to make such items always available, but each purchase increases the price, and it slowly decreases again over time.
