Guys, help me understand how the itch.io system works.

Hey everyone! I created a page for a game I started making, designed it, and started writing blogs. I set the status to "in development." A few days later, I added a demo/intro to the page. I received an email saying the game was published. Is this how it's supposed to be? When I finish the game, upload the archives to the same page, and change the status to "released," will it appear as new, just released on the site?

No.

You released the project the moment you hit the publish button. You will see that in the info box, where it says Published 7 days ago

The status of the game is just an informed quality. You can sort for games by that quality, but it has no pratical meaning beyond that.  /games/in-development  Maybe to inform players of your intention and about how finished and playable the game is. But there is no "release" date, as there is on the big platforms, with official beta testing and whatnot.

Should you have an official release date, due to contracts with a publisher, you can set a release date, or even inform people about a past official release.
