If you're over-relying on assets anyway then the game will probably falter unless they're purely supplemental. I'm of the opinion that free assets are helpful for practice, but they should never be the focal point of your work. You shouldn't make a game that prides itself on its sprites and scenery when most of the images are from a stock library. I lump human made assetpacks together with AI only in this regard in that I don't think people should be overusing them. Exceptions being if you commissioned them for your game specifically, or as I said you're practicing with mechanics or writing and the assets are supplemental.
However if you want my thoughts on AI specifically? Eh. I am of the opinion that there should be as little AI generated assets as possible because I don't really like them. Personally they always look off and they have a certain level of polish that looks uncanny. I'm sure if you used AI to make them, and then edited them yourself you could probably make them look better. But I have never played a game with major AI artworks and had a good experience with the visuals. And I think if you're using AI assets "Because they're quick and easy" and you don't really care about assets, then I think you need to have more respect for the art form that is game sprites and art. A lot of people spend lots of time and effort designing their levels and their textures to give their game a unique identity, and trying to get a cheap pack for your project only robs you of that potential. You're substituting originality for the same tasteless style most generated stuff I've seen has. It sets a bad precedent. The more people take shortcuts the less likely they will be willing to hire artists, and quick and easy game creation will be rewarded. This is why there are so many slop AI asset flip games on this website because people keep playing them regardless of quality.
I suppose if you are some sort of AI connoisseur then do whatever you want. But again if you're going to use asset packs anyway just pick something that's human made at least. It will probably look better, at least in my opinion.
