End life plan
The game works fully offline. The online leaderboard is optional and there's a local one as fallback. The leaderboard server is a small self-hosted Python script, and you can change the server URL in the game's settings, so if my server ever dies anyone can just run their own and point the game at it. I'm also putting the full source of both the game and the server on this page as a download, all of it under the PolyForm Noncommercial license. Anyone can build it, modify it, host it and keep it alive, they just can't sell it. Even if itch or my server disappear, whoever has the zip has the whole game.

Your HOW TO PLAY screen is the best in the jam and I'd like half the entries here to copy it. Five ILLUSTRATED cards, each with its own drawing and a short caption: Slice Chests, Spot Mimics (with the chest that has an EYE peeking out of it, so you learn the visual difference without reading), Build Combos, Combos Heal, Don't Jam Out. It isn't a wall of text, it's an infographic. Anyone understands the entire game in ten seconds.
The game show setting is lovely and properly thought through. Spotlight on the stage, an audience drawn in silhouette at the back, a conveyor with turning gears underneath. And there's a HOST, a rabbit in a crown and a yellow shirt with a salesman's face, talking to you in speech bubbles and even showing up in the tutorial telling you to slice your way to 45. That gives personality to a genre that's normally just fruit flying around.
And the scoring choice is brave and original: the goal isn't more points, it's filling the prize target FASTER, with the leaderboard measuring time. Your page line sums the design up perfectly, caution gets you nowhere, greed jams you, fast wins. Having combos HEAL the jammed machine is elegant too, the game punishes greed but hands you the way back through skill, without ever telling you to slow down. The HUD is lean and correct as well, coins and BEST in the corner, TIME with tenths, and the JAM bar top right.
Being honest about my one problem: I couldn't slice a single chest. I dragged across them repeatedly and the score stayed at 0. But I have to be fair here, my test drags jump from one point to another without the intermediate points a real mouse generates, and a slicing game depends on exactly that trail. This is very likely my setup rather than your game, so I haven't marked you down for it. Someone playing by hand needs to confirm.
Only other note: the window doesn't fill the browser, leaving black bands on the right and bottom. Of everything I played in this round this is the best presented entry, and "works fully offline, the online leaderboard is optional with a local fallback" is exactly the right answer for this jam's end of life question.
