Can the photographed or scanned map be slightly contrast / lightness / saturation adjusted in case if the photograph or scan doesn't match the actual map (i.e. for the purpose of matching the original map)? I can photograph or scan my watercolour maps but with photos the colours often become washed out and the scanning results are overly bright, to the point of being garish.

Yeah, that's okay if you're trying to preserve the look of the original piece.
