Here's how I would answer your questions:

1. Yes, multiple cards can be played on a single roll.
2. Yes, I also thought playing a hearts card would override the roll.
   1. Without using a heart card, a 2 3 3 4 5 1 would score 5.
   2. Using the 3 of hearts, a 2 3 3 4 5 1 would score 6.  One more point with this option; grab that extra munchie.
