The only big thing you can miss due to insufficient stats would be the end of the bear scene (where she farts on you giving a special warmth condition) which checks for finesse.
Otherwise the biggest effects are in skipping certain sections like having a luck of 3 allows you to instantly find the book needed in the library, or having high charisma increases the chance that the mountaineer will accept your flattery, thus skipping the need to get potatoes and ale.
There are a lot of rolls in the first mountain section when climbing the cliff faces, mainly rolling for endurance and strength, and honestly most stat checks and rolls are in the first half.
Like I said though, you're at most missing one part of one scene due to stats. Other scenes like with the mushroom girl have more to do with what decisions you pick in the event, and not your stats.
Some special conditions that alter events do exist, like how you can get the gem before speaking to the Pale Estate owner, and you can also bypass the mountaineer "quest" if you reach the furthest point in the first mountain climb (which checks for endurance, although it is ignored if you've got the warmth condition, making for a 100% success rate).
