The Red counter in the middle is how many seeds are left in the box, it changes from the empty hand (yes thats an empty hand) to a seed when you pick one up, you only have to walk near the box to pick it up. the planting is just pressing fire. It's not very well described, if I can I'll add that to the page now.
The other information is Lives, under Arthur, Flowers Left on the levels, ones that haven't been eaten, you score, and time left to protect the level. Yes I need to do an infographic I think.
