I kind of like your cheese theory, but reflecting on the coffee, I think it's more likely the neighbour hid something in there, like a key. Not sure if it's relevant, but one of the announcement is also that the coffee machine is broken.
It's a good thought, but you get the coffee before anything happens to Phillip. Why would he hide a key in there before then?
