It all depends on the platform you are playing on.
PC: Files are saved in two locations: the game folder and the "AppData" folder. You can therefore delete the game folder without any issues, provided you do not format your PC (Just in case, it is best to keep a backup of your "save" folder).
Mac: The same applies, except that instead of "AppData," the second save location is the "Library" folder.
Android: Generally, save files are retained as long as you do not clear the game's cache; however, this can vary depending on the Android version and the manufacturer's custom user interface (Samsung, Xiaomi, Oppo, etc.), so I cannot say for certain in this case.
